I make this in the spring with burdock gathered from the wild forests along road sides...very old italian tradition ...in Italian they are known as cardoons. Ingredients:
burdock ( or any greens with ribs you like)leaf ribs |
chilli powder - pinch |
oil |
1 tbsp. tomato puree |
water or stock |
honey - clear |
salt and pepper |
Directions:
1. Drop the greens into boiling water and cook for about 3 - 5 minutes. Time will depend on rib thickness and bitterness. 2. Meanwhile, take a pinch of chilli powder and heat in a pan with 2 turnsof oil to release the flavour. · Add some tomato paste to the pan and stir in, followed by about 1 cup of water 3. or stock. Stir. · 4. Add the burdock greens and simmer gently for about 5 minutes. · Season to taste and then stir in a good slug of clear honey. |
