Great vegetarian salad to have on it's own or as a side to any meal. Travels extremely well. Ingredients:
1 (14 ounce) can chickpeas, drained |
1 cup mango, diced |
1/2 cup cucumber, chopped |
1/2 cup red pepper, chopped |
3 tablespoons lime juice |
2 tablespoons fresh parsley, chopped |
1 pinch cayenne pepper |
1/4 teaspoon salt |
1/4 teaspoon ground pepper |
Directions:
1. In a bowl, combine all the ingredients and mix well. 2. Store in a plastic container or plastic bag. |
