Cheese patties was one of my favorite childhood breakfasts. Don't overload them with sugar, let raisins reveal their sweetness Ingredients:
1 lbs dry curd (farmer) cheese - friendship farmer cheese is the best, but california style cottage cheese will work as well |
2 eggs |
1/2 cup sugar |
1/4 tsp salt |
1/2 tsp ground cinnamon |
lemon zest of 1/2 lemon |
1/3 cup raisins, dried cherries or cranberries |
all purpose flour |
cooking oil |
Directions:
1. Mash cheese with the wooden spoon 2. Stir in eggs sugar and salt and mix well, until egg is evenly distributed 3. Add cinnamon, raisins, lemon zest and stir some more 4. Start adding flour in small batches and stir, until thick dough forms 5. Fold the dough out on a board and roll it into a ball 6. With your bare hands, tear off pieces of dough the size of a nectarine or large plum, form balls, drench them in flour. 7. Press each ball down on the board, using your three middle fingers - to about 1/2 thick patty 8. Heat 4-5 tbsp cooking oil in a skillet 9. Fry cheese patties on both sides over medium heat, until pleasantly browned and not too dark 10. Remove from oil with slotted spoon and place on paper towel to drain excess fat. 11. Serve with sour cream on the side 12. GRANDPA'S VARIATION: Skip the sugar and dried fruit. Add more salt. |
