Light, cool salad for those hot summer nights. From Secrets of the Spas by Catherine Bardey. Ingredients:
2 cups grated carrots |
1/2 cup sweetened coconut |
1/4 cup raisins |
1/4 cup slivered almonds |
2 tablespoons red wine vinegar |
2 tablespoons olive oil |
1/4 teaspoon salt |
pepper |
Directions:
1. Place all ingredients in bowl and toss. 2. Season to taste with pepper and serve. 3. ENJOY! |
