An easy and quick, slightly sweet accompaniment to a bowl of soup on a cold winter afternoon. Ingredients:
1 1/4 c whole wheat flour |
1 tsp baking powder |
1 tsp lemon zest |
1/2 tsp baking soda |
1/2 tsp cinnamon |
pinch salt |
1/2 c buttermilk |
1 egg |
3 tbsp molasses |
2 tbsp dark brown sugar |
Directions:
1. Preheat oven to 375F. Grease a loaf pan. 2. Combine flour, baking powder, lemon zest, baking soda, cinnamon and salt. 3. Seperately, combine the remaining ingredients. 4. Add the wet mix to the dry ingredients and blend. Do not over-mix. 5. Pour into pan and bake 40 minutes, or until it tests done. 6. Cool 10 minutes before inverting onto a wire rack and cooling completely. |
