Sweet Bloody Good Ginger Mango Spicy Sauce |

This is something I whipped up with some odds and ends and served with chicken breasts. It would go well with beef, pork, heck even tofu. Enjoy Ingredients:
1 cup sugar (or agave although i have not tried that) |
2 mangoes |
2 blood oranges (organic a must) regular organic oranges if you can't find blood oranges |
juice of one lemon |
1/4 cup water |
1/4 cup port |
one 3 piece of ginger |
1 t or 1 t chili pepper flakes |
Directions:
1. Peel the mangoes and chop into 1/2 inch cubes, toss into a heavy bottomed pot. 2. Add the lemon juice, sugar and water. 3. Juice one orange, add the juice to pot as well. Stir well and let slowly cook. 4. In the meantime, wash the other orange and slice into quaters skin and all, then into thin slices. 5. Julienne the ginger, toss into the pot. Stir and see what things look like. Is it thickening? 6. Good. 7. Keep cooking down till it gets syrupy and thickens. 8. Add port and sliced orange.Stir, and cook for a bit, stirring here and there. 9. Get some jars ready - 2 small mason jars should do. Rinse with boiling water, drain and set aside. 10. Take the sauce off the stove and stir in the chili pepper flakes. If you continue cooking at this point - it will get eyeball stingy...so make sure it's not bubbling at this stage. 11. Pour into jars, cap, pop in the fridge. 12. Done. 13. Serve with chicken, pork or beef or perhaps over vanilla ice cream ? 14. Feel free to add or subtract water in the recipe to get a good consistency and make sure to keep an eye on this as it likes to bubble and burn. |
