Sweet beef curry with corn and peas |

From this week's Young Times magazine, this recipe won 11 year old, Sumaiya Yahya, the title of, Chef of the week ! Ingredients:
1 tablespoon olive oil |
1 -2 tablespoon curry paste |
500 g beef, diced |
1 cup water |
2 cups coconut milk |
2 chicken bouillon cubes |
1 cup baby corn, spears |
1/2 cup fresh green peas |
1/2 teaspoon fish sauce |
2 teaspoons soft brown sugar |
2 teaspoons lime zest, finely grated |
1/2 cup basil, shredded |
Directions:
1. Heat oil in a wok. 2. Add the curry paste. 3. Stir-fry for a minute. 4. Add beef. 5. Stir-fry, tossing the mixture continuously until lightly brown. 6. Add coconut milk, water and chicken stock cubes. 7. Bring to a boil. 8. Simmer uncovered for 15 minutes. 9. Add baby corn and peas. 10. Cook for 5 minutes. 11. Add fish sauce, brown sugar, lime rinds and basil. 12. Mix well. 13. Garnish with basil. 14. Serve hot. |
