Sweet Apricot Chicken & Sugar Snap Peas |

An easy summer dish. Ingredients:
2 garlic cloves, minced |
2 teaspoons minced ginger |
2 teaspoons sesame seeds |
1 tablespoon sesame oil |
1/2 cup apricot jam |
1 tablespoon soy sauce |
2 teaspoons dijon mustard |
1/2 cup dried apricot, diced |
1 cup chicken broth |
2 cups cooked chicken, diced |
2 cups sugar snap peas |
1 lb linguine, cooked |
Directions:
1. Saute garlic, ginger, and sesame seeds in oil over medium-high heat for 2-3 minutes. 2. Add jam, soy sauce, mustard, apricots, and broth. Cook for 5 - 7 minutes to reduce sauce. 3. Stir in chicken and peas. Cook an additional 3 minutes to heat through. 4. Serve over linguine noodles. |
