Sweet Apricot Chicken & Sugar Snap Peas

An easy summer dish.
Ingredients:
2 garlic cloves, minced
2 teaspoons minced ginger
2 teaspoons sesame seeds
1 tablespoon sesame oil
1/2 cup apricot jam
1 tablespoon soy sauce
2 teaspoons dijon mustard
1/2 cup dried apricot, diced
1 cup chicken broth
2 cups cooked chicken, diced
2 cups sugar snap peas
1 lb linguine, cooked
Directions:
1. Saute garlic, ginger, and sesame seeds in oil over medium-high heat for 2-3 minutes.
2. Add jam, soy sauce, mustard, apricots, and broth. Cook for 5 - 7 minutes to reduce sauce.
3. Stir in chicken and peas. Cook an additional 3 minutes to heat through.
4. Serve over linguine noodles.
