Great with ham anytime and a natural for the holidays. Ingredients:
4 medium yams, peeled and sliced |
1/2 teaspoon orange peel, finely shredded |
1/2 cup orange juice |
1 tablespoon brown sugar |
1/4 teaspoon salt |
1/2 teaspoon cinnamon |
1/8 teaspoon allspice |
Directions:
1. In a large skillet, bring 1 of water to a boil. 2. Add yams. 3. Cover and simmer for 15 minutes or until they are tender. 4. Drain. 5. In a small bowl, mix orange peel, orange juice, brown sugar, salt, cinnamon and allspice. 6. Pour over yams in skillet. 7. Cook and stir until bubbly. 8. Simmer, uncovered, for 5 minutes, spooning sauce over potatoes occasionally to make a glaze. |
