Sweet and Spicy Soft Tacos |

I had some pot roast left over, I threw some of my favorite ingredients in it and I created a great dish!! Now I make more roast than I need just so I can make these!! I have also used pork roast....but I cook that a little different than my roast. I'll post both recipes! Ingredients:
2 cups left over pot roast (shredded) |
1/4-1/2 cup barbecue sauce |
1 -2 chipotle chile in adobo, chopped (you can omit the seeds if you want) |
2 tablespoons adobo sauce |
1/2 cup orange marmalade |
1/4 cup honey |
corn or flour tortilla |
queso fresco or monterey jack cheese or your favorite cheese |
lettuce |
tomato |
onion |
cilantro, chopped |
Directions:
1. Mix barbecue sauce and 1/2 chipotle pepper (if you like it spicy add the whole pepper), heat over low heat. 2. Add shredded roast, and simmer (you may need to add just a little water). 3. In small bowl combine the other 1/2 to 1 whole chipotle, adobo sauce, orange marmalade and honey. 4. Heat in microwave. 5. Spoon a couple tablespoons of meat mixture in tortilla. 6. Add cheese and drizzle with marmalade sauce. 7. Heat for about 25 seconds in microwave. 8. Top with lettuce, tomatoes, onion and cilantro if desired. 9. I like mine with out any lettuce or tomatoes. |
