3/4 lb lean ground beef (at least 80%) |
3/4 lb ground pork |
1/3 cup breadcrumbs |
1/3 cup onion, finely chopped |
1/3 cup red bell pepper, finely chopped |
3/4 teaspoon garlic powder |
3/4 teaspoon salt |
1/2 teaspoon ground coriander |
1/4 teaspoon pepper |
1 egg, slightly beaten |
1 cup jalapeno jelly (red colored) |
2/3 cup apple juice |
2 tablespoons cornstarch |
1 teaspoon salt |
1/2 teaspoon ground ginger |
1/2 teaspoon garlic powder |
Directions:
1. Heat oven to 375°F Line a rimmed baking sheet with foil and spray with non-stick cooking spray. In large bowl, mix meatball ingredients until well blended. Shape 1 1/4 meatballs. Place in pan. Bake 25 to 30 minutes or until thoroughly cooked and no longer pink in center. 2. In large saucepan, mix sauce ingredients. Cook over medium heat 2 to 3 minutes, stirring constantly, until thickened. 3. Add meatballs to sauce; stir to coat. Cook over medium-low heat 5 to 7 minutes, stirring occasionally, until hot. |
