Sweet And Spicy Grilled Plantains |

great side dish to meat or poultry Ingredients:
2 very ripe plantains |
1/2 cup cream of coconut |
2 tbs fresh lime juice |
1 tsp grated lime zest |
salt and pepper to taste |
1/2 cup sweet flaked coconut toasted ( garnish ) |
Directions:
1. Peel plantains and cut lengthwise in half. 2. Place halves on greased grill rack. Cover and grill medium high heat about 5 minutes on each side or until they are lightly charred. 3. Stir together remaining ingredients and drizzle over the heated charred plantains. 4. Sprinkle with the toasted coconut 5. Note: Increase recipe for desired amounts of servings. |
