I found the exact recipe for Sweet and Spicy Black Beans on at least 3 different blogs - but I made one small change that added a significant amount of extra flavor. These are delicious on their own, but how about using as a salsa for grilled chicken, a filling for burritos, mixed with cooked rice for quick black beans and rice - the possibilities are endless. 1 med. onion, finely chopped |
1 15 ounce can black beans, rinsed and drained |
1 10 ounce can rotel mexican (lime and cilantro) tomatoes, undrained |
1/8 cup honey |
1/8 cup packed light brown sugar |
1/4 tsp. garlic powder |
1/4 tsp. ground ginger |
1/4 tsp. salt |
Directions:
1. Saute the onion in olive oil for 5-10 minutes . 2. Drain and rinse the black beans. 3. Add the beans, diced tomatoes, honey, brown sugar, ginger, garlic and salt to the onion mixture in the skillet. 4. Bring to a boil and continue to simmer for 20-30 minutes. |
