Sweet And Spicy Beet Salad |

For those who likes beets, it is a great salad for any occasion. Very easy to prepare. It goes very well with fish, especially salmon. Ingredients:
2 large beets |
6 medium garlic cloves, minced |
3/4 cup walnuts, coarsely chopped |
10 pitted prunes, coarsely chopped |
mayo or miracle whip |
salt to taste |
Directions:
1. Cover beets (in skin) with cold water in a pot and cook until knife pierces them through easily - about 45 min to 1 hour. 2. Cool down until manageable, peel, and shred in the food processor, or using a coarse hand shredder. 3. Mince the garlic, add to the beets. 4. Coarsely chop the prunes and add to the beets 5. Mix in the walnuts. Add salt, if desire. 6. Add mayo of your choice and mix thoroughly. 7. Put in the refrigerator to cool down completely. 8. Serve cold. |
