Sweet And Sour Spinach Rhubarb Salad

This is a fantastic salad that I got from my friend Mona when she hosted a dinner party last wee. Rhubarb is hard to find in Texas so we have to get it frozen, but this is an incredible salad. Enjoy
Ingredients:
4 stalks rhubarb cut diagonally into thin slices
1/4 cup granulated sugar
2 tablespoons red wine vinegar
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
20 spinach leaves
6 tablespoons vegetable oil
Directions:
1. Place rhubarb in a wide saucepan.
2. Sprinkle on sugar and add enough water to cover by 1”.
3. Place over high heat and bring to a boil then cook uncovered 2 minutes.
4. Remove from heat and pour through a large sieve into a bowl.
5. Return liquid to the pan then stir in vinegar, salt and pepper and place over high heat.
6. Cook uncovered until mixture is reduced to 1/2 cup.
7. Meanwhile divide spinach among 4 salad plates and arrange rhubarb over the spinach.
8. When liquid is reduced remove pan from heat and whisk in the oil.
9. Pour over the salads and serve at once.
