This tangy, sweet, and crunchy slaw derives pleasant heat from the serrano chile. Ingredients:
1/2 cup white wine vinegar |
1/3 cup sugar |
1/4 cup fresh orange juice |
4 cups very thinly sliced green cabbage |
4 cups very thinly sliced red cabbage |
1/2 cup finely chopped red onion |
1/2 teaspoon kosher salt |
1 serrano chile, seeded and finely chopped |
Directions:
1. Combine first 3 ingredients in a small saucepan; cook over low heat 3 minutes or until sugar dissolves, stirring with a whisk. Chill. 2. Combine vinegar mixture, cabbages, onion, salt, and chile. Cover and chill. Toss gently before serving. |
