Sweet And Sour Shrimp Fish Or Pork

This is an easy recipe to prepare and enjoy it if you love sweet and sour flavors... can be prepared with shrimps, fish or pork.
Ingredients:
2 lb shrimps, fish or pork
3 tablespoons salad oil
2 1/2 cups of pineapple chunks and juice
2 teaspoons ground ginger
1 green pepper
1/2 cup vinegar
1/2 cup sugar
pinch of salt
2 tablespoons of soy sauce
2 1/2 teaspoons of cornstarch
Directions:
1. Heat oil in saucepan, toss in shrimp and cook for 5 min. Stir constantly.
2. Now pour in pineapple juice, add ground ginger, pepper cut in strips, vinegar, sugar, salt and soy sauce. Cook over low fire for 2 min.
3. Spoon out a little of the liquid and mix with the cornstarch until you have a smooth paste.
4. Pour back into meta mixture and cook slowly, stirring constantly until the liquid is transparent and slightly tic.
5. Serve with fluffy, pipping hot rice.
