Sweet and Sour Sauerkraut Kielbasa Stew |

A crockpot stew that could be adapted to the stovetop..... just cover and simmer until potatoes and carrots are tender. A nice blend of sweet and sour flavors. Ingredients:
28 ounces sauerkraut, drained |
1 large onion, chopped |
4 medium potatoes, cut into 1 1/2-inch cubes |
1/2 cup diced carrot |
1 1/2 cups chopped green bell peppers |
2 minced garlic cloves |
1 lb low-fat turkey kielbasa (can use ham instead) or 1 lb low-fat turkey kielbasa, cut into 1-inch slices (can use ham instead) |
1 medium tart apple, diced |
2 (8 ounce) cans crushed pineapple, undrained |
1 1/2-2 cups chicken broth, depending how liquidy you like it |
1/2 cup white wine |
2 tablespoons brown sugar |
1/2 teaspoon pepper |
1 teaspoon caraway seed |
salt, if needed, to taste |
Directions:
1. Place all ingredients into your slowcooker. 2. Stir lightly. 3. Place lid on and cook on low for 6-8 hours or high for about 3 1/2 hours or until your potatoes and carrots are tender. 4. If using stovetop, just bring everything to a boil, reduce heat, cover and simmer for about 45 minutes or until veggies are tender. |
