This colorful red cabbage slaw is great served with German potato salad, assorted sausages and mustards and country rye and black bread. From an October 1988 issue of Bon Appetit in the Cooking for Friends section. Ingredients:
2 cups sour cream |
5 tablespoons cider vinegar |
2 tablespoons firmly packed brown sugar |
2 tablespoons german mustard |
salt & freshly ground black pepper |
10 cups shredded red cabbage |
2 cups diced peeled cucumbers |
2 cups shredded cored apples |
3/4 cup minced green onion |
4 teaspoons caraway seeds |
Directions:
1. Combine first 4 ingredients in bowl; season with salt and pepper. 2. Combine all remaining ingredients in large serving bowl; pour dressing over and toss gently to mix. 3. Refrigerate, covered, until serving time. |
