Sweet And Sour Red Cabbage Spread |

A cold sweet and sour additoin to sandwiches (such as meatloaf, turkey, ham, beef, pork, you get the picture Ingredients:
1 head red cabbage, coarsely shredded (you don;t need a very big head) |
2 tart cooking apples like granny smith, peeled chopped |
2 3 tbsp. bacon drippings (save them puppies!) |
1 tablespoon margarine |
1/2 cup raisins |
1 1 1/2 qts. cran-grape or cran-apple juice |
1/2 cup white vinegar |
1 cup sugar |
1/2 teaspoon black pepper |
Directions:
1. Heat the bacon grease and margarine in a heavy saucepan. 2. Add the cabbage and coat it well. 3. Add the apples, raisins and Cran-Grape juice and let it simmer for 1 1/2 hours, stirring frequently. 4. Add sugar and vinegar and pepper. (No salt is needed because bacon grease is salty.enough) 5. Cook another 1/2 hour. 6. More juice may be added for moisture. 7. Serve cold on almost any pate or on meatloaf, ham sandwiches etc.. |
