Sweet And Sour Red Cabbage |

This is an old recipe that I make often. It's crunchy and salty and sweet at the same time. Goes great with sausages or schnitzel. Ingredients:
1 medium head red cabbage, shredded |
1/2 c cider vinegar |
1/4 c brown sugar, packed |
1/4 c white sugar |
6 bacon strips, diced |
2 medium tart apples, peeled and diced |
1/3 c onion, chopped |
1/4 c water |
3 tbsp additional cider vinegar |
1 tsp salt |
1/4 tsp pepper |
1/2 - 1 tsp ground cloves |
Directions:
1. Place the vinegar and sugars into a large bowl and stir until sugar mostly dissolves. Add shredded cabbage and stir to coat. 2. Let this mix sit for 10-15 minutes. 3. Meanwhile, cook bacon in skillet until crisp. Remove and set aside, leaving the drippings in the pan. 4. In the drippings saute the onions and apples for about 5 minutes or until softened. 5. Add the water and the cabbage mixture and bring to a boil. 6. Reduce the heat, cover and simmer for about 40 minutes. 7. Uncover and add the rest of the ingredients and let it all simmer away for another 20 minutes. |
