Sweet And Sour Red Cabbage |

This is one of my ultimate comfort foods - I've been making it for about ten years now. Cider vinegar and cabbage are also two ultimate superfoods, health-wise, and I have tweaked this recipe to make it completely fat free. Read more . So it is a comfort-food indulgence with no downside! Ingredients:
1/2 cup + 1/2 cup vegetable broth |
1 onion, chopped |
1 head red cabbage, shredded or thinly sliced |
5 t. cider vinegar |
1 large, tart apple, chopped (and, optionally, peeled - i like the peel) |
1/2 cup currants or raisins |
1/2 cup apple cider |
5 cloves |
pinch fresh-ground nutmeg |
salt and pepper to taste |
Directions:
1. Heat about 1/3 cup broth in a large, heavy pot over medium heat. Add onions and saute in the broth until soft (about 5-8 minutes). 2. Add shredded cabbage and a little more broth and cook, tossing and stirring, about 10 minutes. 3. Add vinegar and remaining broth. Reduce heat to low and cook, covered, about 20 minutes. 4. Add remaining ingredients (apple, currants/raisins, cider, cloves, nutmeg, salt, pepper). Cover and simmer for 1 1/4 hours. 5. Adjust seasoning if necessary, adding more vinegar or pepper. 6. Serve as a side dish, or as a simple lunch over cottage cheese. |
