                    Easy side dish..... Ingredients: 
                    
                        
                                                can be made vegetarian w/o the bacon)  |  
                                                2 tbs vegetable oil  |  
                                                1/2 onion, thinly sliced  |  
                                                1/2- 1 apple, peeled, cored, chopped  |  
                                                4 c thinly sliced red cabbage (about 3/4 lb.)  |  
                                                1/4 c good quality apple cider vinegar  |  
                                                1/4 c sugar  |  
                                                1/2 tsp celery seed  |  
                                                1/4 c diced canadian bacon (or regular)  |  
                                                salt and pepper to taste  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Heat oil in heavy large saucepan over med-high heat. Add onion and apple and sauté until golden, about 7 minutes.............................. 2. Add cabbage and vinegar, sugar and celery seed and cook until cabbage is crisp-tender and liquid is reduced to glaze, about 10 minutes. Mix in bacon.
