Sweet-And Sour Red Cabbage |

A recipe I remember having when I was a child. You can make this, and store in the fridge for 3 days, then just reheat over medium heat. Ingredients:
5 cups shredded red cabbage |
2 cups water |
4 slices bacon |
2 tablespoons brown sugar |
1 tablespoon all-purpose flour |
1 1/4 cups red wine vinegar |
1/3 cup water |
1 small onion, thinly sliced and separated into rings |
1 small apple, chopped |
1/2 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Place cabbage and 2 cups water in a saucepan. Bring to a boil over medium-high heat, cover, reduce heat, and simmer 5 to 8 minutes or until crisp tender. Drain; set maside. Cook bacon in a skillet until crisp. Drain bacon on paper towels, reserving 1 tbls. drippings in skillet. Crumble bacon; set aside. 2. Add brown sugar and flour to drippings in skillet; stir until smooth. Gradually add vinegar and 1/3 cup water, stirring until smooth. Add onion and remaining ingredients; cook 5 minutes or until slightly thickened; stirring frequently. Stir in cabbage and bacon. Cool. |
