Sweet and Sour Red Cabbage |

Authentic and tasty! I found this in a recipe book in my Grandma's library (A World of Good Eating). I haven't been able to find a reprint of the book but the recipes are quite delicious. Ingredients:
1 large red cabbage |
4 tablespoons bacon fat |
1 medium onion, chopped coarsely |
1/2 teaspoon salt |
2 tart apples, cored and sliced (granny smith is my favorite) |
1/4 cup boiling water |
1/2 cup vinegar |
1/3 cup brown sugar |
Directions:
1. Remove the outer leaves and hard core from cabbage and chop coarsely. 2. Heat the bacon fat in a large skillet or kettle. Add onions and slowly cook until tender. 3. Add the cabbage and salt. Cover and steam for 10 minutes. 4. Add apples and 1/4 cup boiling water. 5. Cover and simmer over low heat for 1 hour or until the cabbage is tender. 6. Add the vinegar and sugar and continue to cook 15 minutes longer. 7. Serve hot. 8. NOTE: Sugar and vinegar amounts can be varied according to your family's tastes. |
