From Quick Fix Meals with Robin Miller, Episode Low and Slow. Ingredients:
3 cups potatoes, peeled and cubed (idaho or yukon gold) |
1 cup onion, chopped |
3 lbs pork roast, trimmed |
4 garlic cloves, minced |
1 cup water |
1/2 cup ketchup |
3 tablespoons red wine vinegar |
2 tablespoons light brown sugar |
2 tablespoons reduced sodium soy sauce |
1 teaspoon dijon mustard |
1/2 teaspoon ground black pepper |
salt |
Directions:
1. Fill the bottom of the crock pot with potatoes and onion. Lay the pork on the bed of potatoes and onion. Rub garlic onto the pork. 2. Mix the remaining ingredients in a separate container and pour mixture over the pork. Note: mixture should be thick enough to coat not rinse the pork; add more ketchup to mixture if necessary. 3. Cook in crock pot on low for 6 to 8 hours. |
