Canada's Peak of the Market's recipe for today is this truly succulent dish of pearl onions. Make a good side dish for any meat. Ingredients:

pearl onions 2 1/2 lb |
3 strips orange rind |
1 bay leaf |
raisins 1 cup |
olive oil 2 tbsp |
red wine vinegar 2 tbsp |
tomato paste 1 tbsp |
salt 1/2 tsp |
pepper 1/4 tsp |
1 garlic clove, slivered |
Directions:
1. In a glass bowl; add onions and cover with boiling water. Let stand for 30 seconds. Drain and peel. Cut shallow X in root end of each. 2. In a 13 x 9 inch (3 L) baking dish; combine onions, orange rind and bay leaf. 3. In small saucepan; add 1 cup (250 ml) water, raisins, oil, vinegar, tomato paste, salt, pepper and garlic. Bring to boil. Pour over onions. 4. Cover and bake in preheated 325 F (160 C) oven for 2 hours or until onions are tender and sauce is thickened. Baste and mix sauce every 30 minutes. Discard orange rind and bay leaf. |
