If you love onions this is the recipe for you. These little delights are to die for in my opinion. Great as a stand alone side dish or over steak, poultry or fish. We love them. Yummers Ingredients:
4 medium red and yellow onions cut into 1” thick wedges |
2 tablespoons extra virgin olive oil |
1/4 cup red wine vinegar |
2 tablespoons sugar |
1/2 cup water |
2 tablespoons unsalted butter |
Directions:
1. Preheat broiler. 2. Arrange onion wedges in a single layer on a large sheet pan and brush with oil. 3. Season with salt and pepper then broil 5 inches from heat turning until golden brown. 4. Bring vinegar, sugar and water to simmer in a medium saucepan then add onions and butter. 5. Simmer covered for 5 minutes. 6. Uncover pan and continue to simmer stirring for 2 minutes. 7. Salt and pepper to taste then let stand until cool. |
