This is a tasty easy recipe that my husband's family loves, and feeding six boys and one girl from his family they all like, isn't a walk in the park. It's easy to make gluten free as long as you have the right mini smokies on your side. Around the Midwest region I know the Wimmer's Meat Co makes little smokies that are gluten free and rather yummy. Ingredients:
2 tablespoons cornstarch |
1/2 cup brown sugar |
1 (20 ounce) can chunk pineapple, undrained |
1 tablespoon gluten-free soy sauce |
1/4 cup vinegar |
1 lb gluten-free little smokies (gluten free, i like wimmer's) |
Directions:
1. In a 1.5 to 2 quart casserole: combine the cornstarch and brown sugar. 2. Stir in remaining ingredients. 3. Microwave, covered, 13-15 mins or until mixture boils and thickens, stirring halfway. 4. It does have a tendency to boil over in the microwave so you might want to keep an eye on it unless you need to clean your microwave. |
