Easy to make and handy when you're in a hurry. The recipe calls for pork but you could use any ground meat you like or a mixture of meats. Ingredients:
1-1/2 lbs. lean minced pork (you could use beef, turkey, chicken, lamb or a combo of your favourites) |
2-3 garlic gloves, minced |
1 oz./25g fresh breadcrumbs or seasoned bought |
salt and pepper to taste |
1 teaspoon of dried mixed herbs |
1-1/2 teaspoons dried parsley |
1 egg, beaten |
flour for coating |
fat for shallow frying |
1 large red pepper, cored, seeded and sliced |
7 oz./200g canned crushed pineapple but rings or tidbits can be chopped |
3 oz./75g brown sugar |
4 tablespoons cider vinegar |
2 tablespoons soy sauce |
1/2 pint/300ml stock (vegetable stock is fine) |
1 tablespoon cornflour |
Directions:
1. Mix together the pork, garlic, breadcrumbs, salt, pepper and herbs and bind with the egg. 2. Shape into 16 balls and coat lightly with flour. 3. Shallow fry for 5 minutes until golden brown on all sides. 4. Drain well and place in a baking dish. 5. Put the red pepper, pineapple, sugar, vinegar, soy sauce, stock, salt and pepper in a saucepan and bring to the boil. 6. Dissolve the cornflour in a little water and add to the pan. 7. Simmer, stirring until thickened. 8. Pour this sauce over the pork balls, then cover the dish and bake in a preheated oven (350F/180C, Gas Mark 4) for 45 minutes. 9. Serve hot with boiled rice or noodles. 10. This recipe can be an appetizer or a main course meal. |
