Easy meal! Ingredients:
1 1/2 cups sliced carrot |
1/2 green bell pepper, chopped |
1/2 red bell pepper, chopped |
1 onion, chopped |
2 tbsp tapioca, quick-cooking |
1 lb skinless chicken breast |
8 oz pineapple, canned in unsweetened juice |
1/3 cup splenda brown sugar |
1/3 c vinegar |
1 tbsp soy sauce |
1/2 tsp chicken boullion |
1/4 tsp garlic powder |
1/4 tsp ginger |
1 tsp salt |
Directions:
1. Place vegetables in the bottom of the slow cooker. Sprinkle with tapioca and add chicken. In a separate bowl, combine pineapple, splenda, vinegar, soy sauce & spices. Pour over chicken. Cover and cook on low 8-10 hours or 4-5 hours on high. Serve over rice. |
