Sweet and sour stir fry using left over roast chicken and various vegetables. Wouldn't recommend using leftovers again as the chicken ends up shredding into the sauce (unless you like that sort of thing) Ingredients:
113 g bean sprouts |
50 g baby corn , sliced |
57 g mange tout |
270 g bell peppers , sliced |
120 g carrots |
98 g onions , sliced |
104 g tinned pineapple , drained |
250 g roasted chicken , chopped |
300 g sweet & sour stir fry sauce |
Directions:
1. Wash and prepare vegetables - slice peppers, onions and baby corn. Drain juice from tinned pineapple. 2. Chop up left over chicken 3. Spray some 1cal oil on a pan and heat to a high heat 4. Add chicken to pan and stir for one minute 5. Add vegetables and stir fry until at preferred level of crunch 6. Add sauce to pan and stir until everything is coated, then serve |
