Sweet and Sour Chicken Soup |

An Asian influenced chicken noodle soup that's just so... Yummy! Ingredients:
1/3 cup onion, finely chopped |
3 garlic cloves, minced |
1/2 teaspoon fresh ginger, grated |
6 cups chicken stock |
1 1/2 tablespoons rice vinegar |
2 tablespoons soy sauce |
1 1/2 cups mushroom caps, sliced thin |
1 1/2 cups chicken breasts, cooked and shredded |
2 cups spinach leaves, thinly sliced |
1 1/2 ounces angel hair pasta, uncooked |
1/2 teaspoon salt |
1/8 teaspoon white pepper |
Directions:
1. In a large soup pot, saute onion and garlic in 2 tsp olive oil for 3 minute. 2. Add ginger for 30 sec. 3. Add stock and mushrooms and bring to a boil. 4. Cover, reduce heat, and simmer 30 minute 5. Stir in chicken, spinach, and noodles; cook for 5 minute. |
