Sweet and Sour chicken, no batter. Ingredients:
400 g bell peppers (1in pieces) |
400 g onion (eighths) |
625 g chicken breast (cubed) |
432 g tinned pineapple in juice |
1 tbsp cornflour |
2 tsp soy sauce |
2 tbsp tomato ketchup |
1 tbsp white vinegar |
Directions:
1. fry chicken in spray oil until browned then set aside. 2. fry peppers and onion for 5 mins or until softened. 3. combine cornflour, soy sauce, 125ml of water, tomato sauce, vinegar and juice from pineapple in a bowl. add to peppers and onions. 4. add chicken and boil for 5/10mins until thickened and chicken is cooked through. 5. Stir in pineapple pieces and warm for further 3/4mins. |
