Sweet And Sour Cabbage Soup |

Sweet tasting, from the apples, and sour from the vinegar. A unique but quite tasty combination. Add a sliced apple and scoop of sour cream for garnish, and its just as beautiful as it is delicious! Ingredients:
3 cups red cabbage, shredded |
1 onion, sliced thin |
1 granny smith apples - peels and cores removed, cut into slices |
1/3 cup raisins |
4 cups beef stock |
1/4 cup apple butter |
1/2 cup cider vinegar |
1/4 cup packed brown sugar |
1/4 tsp ground black pepper |
1/4 tsp celery seed |
2 tbsp butter |
1/2 tsp salt |
Directions:
1. In the butter, saute the apple and onion, in a large saucepan, until tender. Add in the cabbage and saute for an additional 5 minutes. 2. Pour in the stock and vinegar then bring to a boil. Lower the heat and mix in the raisins, sugar, celery seed, salt and pepper. Then, simmer, uncovered, for 1 hour. Stir in the apple butter and serve. |
