These sweet and moist banana muffins are not only delicious, they're full of some healthy ingredients to curb the not so healthy ones!! Everytime I make these, people love them. They're moist, sweet and hearty. I usually eat them for breakfast or as a snack!! Enjoy!!
Ingredients:
4 ripe bananas
1 cup whole wheat flour
1/2 cup unbleached flour
2 tablespoons wheat germ
1/4 cup oat bran
1/2 cup sugar
1 egg
1 egg white
1/3 cup melted butter or 1/3 cup margarine
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2-1 teaspoon orange peel
1/4 teaspoon nutmeg
1 tablespoon vanilla extract
Directions:
1. Heat Oven to 350 degrees.
2. 1. In a bowl, mash together banana, melted butter, sugar and eggs.
3. 2. Add in the vanilla extract, cinnamon, nutmeg, orange peel.
4. 3.In a separate bowl, mix together flour, baking soda, baking powder, salt, oat bran and wheat germ.
5. 4. Add wet ingredients to the dry ingredients and mix well.
6. 5. Make sure to spray your muffin pan with nonstick spray.
7. 6. Fill the muffin tray and bake for 20 minutes or golden.
