Sweet-and-Hot Pork Stir-fry |

Ingredients:
1 pound pork tenderloin |
3 tablespoons peanut oil, divided |
6 green onions, cut into 1-inch pieces |
3 cups chopped fresh broccoli |
1 tablespoon minced fresh or 1 tsp. ground ginger |
2 garlic cloves, minced |
1 (8-oz.) can pineapple tidbits in juice |
3/4 cup chicken broth |
2 tablespoons soy sauce |
2 teaspoons cornstarch |
hot cooked rice |
Directions:
1. Cut pork into 1-inch pieces. 2. Stir-fry half of pork in 1 Tbsp. hot oil in a large skillet or wok over high heat 4 to 5 minutes or until browned. Remove from skillet. Repeat procedure with 1 Tbsp. oil and remaining pork. 3. Stir-fry green onions and next 3 ingredients in remaining 1 Tbsp. hot oil 3 to 4 minutes. Return pork to skillet; stir-fry 2 minutes. 4. Stir together pineapple and next 3 ingredients until smooth; add to pork mixture, and stir-fry 3 to 4 minutes or until thickened. Serve over hot cooked rice. |
