Sweet and Crunchy Portabello Burger

I ate a Potabello burger at a little greek restaurant about 6 months ago and loved the flavors and textures. Of course, I had to try making it at home with my own flavors.
Ingredients:
4 portabella mushrooms, medium sized
4 red onions, slices about 1/8 to 1/4 inch thick
4 tomatoes, slices about 1/2 inch thick, i prefer a nice heirloom variety
1/2 cup bean sprouts
4 tablespoons balsamic vinegar
10 tablespoons olive oil
3 red bell peppers, roasted, peeled, and seeded
1 sweet potato, baked, cooled, and cut into about 1/2 inch slices
4 rolls, i prefer pumpernickel but choose your favorite
1/2 cup mayonnaise, light
1 tablespoon lemon juice, fresh squeezed
1 garlic clove
2 scallions
1 tablespoon honey
salt
pepper
Directions:
1. Clean the mushrooms gently by using a spoon to remove the gills and a dry paper towel to remove any dirt. Do not wash!
2. Brush each mushroom on both sides with 1 TBS (each) of olive oil and 1 TBS (each) of the Balsamic Vinegar. I prefer to use a thick balsamic vinegar - either a high quality variety or a reduction. Season each side with a sprinkle of salt and pepper.
3. Heat a grill pan to medium high heat and 4 TBS of the Olive Oil. Grill the mushrooms for about 3 minutes on each side (or until cooked through). Be careful not to move them around too much as you want pretty grill marks to develop.
4. In the meantime, make the sauce by mixing together the mayonnaise, lemon juice, remaining 2TBS Olive Oil, Garlic clove, scallions, 1 of the red bell peppers, and honey in the food processor. Blend until smooth.
5. Sometimes I will add a little fresh parsley if there is some available in my garden. You can also mix up the flavors a bit and add a canned Chipotle Pepper in Adobo sauce, lime instead of lemon, or cilantro rather than parsley. Season to your liking with Salt and Pepper.
6. Toast your rolls and spread each one with the sauce on both sides.
7. Build the burger by layering with the mushrooms, onion, tomato, sweet potato, bean sprouts, and 1/2 of each remaining red bell pepper. The colors are just beautiful together and your mouth will be happy when you enjoy!
