This cake is moist, not to sweet and delicious. After people try it they always ask for the recipe. Ingredients:
2 cups sugar |
4 tbsp. butter (room temperature) |
2 eggs |
1 (20 oz) can crushed pineapple |
1 tsp. soda |
1 tsp. pure vanilla |
1/2 cup chopped pecans |
2 cups unsifted flour |

1 (8 oz ) package cream cheese (softened |
8 tbsp. butter (room temperature) |
1 tsp. pure vanilla |
2 1/2 cups powdered sugar |
2/3 cup chopped pecans. |
Directions:
1. Preheat oven to 350 degrees 2. In a mixer bowl beat the sugar and butter until fluffy. 3. Add the 2 eggs one at a time. 4. Add the pineapple and all the juice. 5. Add the flour and the soda. and mix well. 6. Add the 1/2 cup chopped nuts. 7. Pour into a greased and lightly floured 9x13 glass baking dish. 8. Bake for 45-55 minutes (Toothpick test for doneness). 9. Mix all ingredients for the frosting together. 10. Make sure the cake is completely cool before frosting it. 11. Enjoy! |
