I love these tasty pancakes. This is the recipe my mother used and of course our moms and grandmas always have the best recipes! I blend my ingredients in a blender to make sure it is smooth. My biggest challenge is not to pour too much batter in the pan. These are very thin pancakes. We like to butter them and sprinkle powdered sugar on them, roll them up and eat with our hands while they are still warm. Ingredients:
1 cup flour |
3 eggs |
1 cup milk |
1 teaspoon salt |
5 -6 tablespoons sugar (according to taste) |
butter (for frying) |
Directions:
1. Place all ingredients in blender and blend until smooth. 2. Heat skillet until a drop of water bounces off the surface. Place a small amount of butter in pan for first pancake, this is to help season the pan. 3. Pour a thin layer of batter in pan, swirling pan just enough to cover the bottom. Pancakes should be thin. 4. Cook pancakes on both sides just until they are beginning to brown. 5. Butter cooked pancakes, sprinkle with powdered sugar, roll and eat warm. |
