All the flavors of Swedish Meatballs without all the fuss...Great with buttered noodles. Ingredients:
meatloaf |
1 1/2 lbs. ground beef |
3/4 cup breadcrumbs, plain |
1/4 cup onion, finely chopped |
2 eggs, beaten |
1/4 cup half and half |
3/4 tsp. salt |
1/4 tsp. pepper |
1/8 tsp. allspice |
sour cream mushroom sauce |
2 cups mushrooms, sliced |
1 tbls. butter |
1/4 cup butter |
1/4 cup flour |
2 cups chicken broth |
1-8 oz. carton sour cream |
2 tsp. dill weed, dried |
salt and pepper to taste |
Directions:
1. Meatloaf 2. Preheat oven to 350 3. In mixing bowl, combine all ingredients well but don't over work meat 4. Shape into 8x4 inch loaf 5. Put onto baking sheet and bake for 1 hour 6. Sour Cream and Mushroom Sauce 7. In large skillet, saute mushrooms in 1 tbls. butter until tender 8. Remove and set aside 9. Melt 1/4 cup butter in skillet over low heat 10. Add flour and stir until smooth 11. Cook 1 minute, stirring constantly 12. Gradually whisk in chicken broth and cook over medium heat, whisking until thick and bubbly 13. Remove form heat 14. Stir in sour cream, mushrooms, dill weed, salt and pepper |
