This is another version of our family's Swedish Meatballs. I did make these a few months back. I cut the recipe in half and still had way too much meat mixture for only 3 people. I used the remaining meatballs for my Spaghetti dinner. There was about 20 meatballs left over. My 23 yr old son claimed it was the best Spaghetti & Meatballs I had ever made. The recipe is definitely for a larger group of people. If you're just cooking for 2 or 3 then you'll need to cut down the recipe alot more. Ingredients:
2 lbs ground beef |
1 lb ground pork |
1 cup minced onion |
1 1/2 cups fine breadcrumbs |
1 tablespoon minced parsley |
2 teaspoons worcestershire sauce |
2 eggs |
1 cup milk |
3 teaspoons salt |
1/4 teaspoon pepper |
1/2 cup flour |
2 teaspoons paprika |
1 teaspoon salt |
1/4 teaspoon pepper |
4 cups boiling water |
1 1/2 cups sour cream |
Directions:
1. Mix all ingredients thoroughly. 2. Shape into small size balls about walnut size. 3. Brown in 1/4 cup hot oil, you may need more oil. 4. Remove meatballs and make gravy. 5. Return meatballs to gravy and cook 15-20 minutes. 6. For Gravy:. 7. Stir in 1/2 cup flour, 2-tsp. paprika, 1 teaspoons salt, 1/4 teaspoons pepper into hot fat in skillet. 8. Stir in 4-cups boiling water. 9. Add 1 1/2 cups of sour cream. 10. For a smaller group of people, cut the recipe down to about half or even to 1/3. |
