A not-too-hot chili that even my kids ate. The chorizo gives it the heat and added flavor. Ingredients:
1 lb ground beef |
10 ounces chorizo sausage |
1 (15 ounce) can italian-style diced tomatoes |
1 (13 1/2 ounce) can diced tomatoes with green chilies |
1 (15 ounce) can tomato sauce |
2 (15 ounce) cans pinto beans |
1 (13 ounce) can great northern beans |
1 1/2 cups frozen corn |
1 medium onion, chopped |
3 garlic cloves, minced |
1 1/2 cups water |
3 teaspoons celery salt |
2 teaspoons cumin |
1 teaspoon chili powder |
1 teaspoon fresh ground black pepper |
Directions:
1. Brown ground beef, adding chorizo towards end of browning. Add chopped onion, minced garlic and spices, sautee 3-4 minutes until onion is tender. Add rest of ingredients, bring to a boil then reduce heat to low and let simmer for 1 hour , stirring occasionally. Serve w/ chopped red onion, cheese, sour cream or your favorite chili topper. |
