Nice warming meal easy to prepare. Ingredients:
794 g (1lb 12oz) chicken thighs, skin and bones removed |
3 tbsp dried mixed herbs |
2 cloves garlic, crushed |
142 ml (1/4pt) chicken stock |
500 g passata |
500 g passata |
255 g (9oz) green beans, halved |
1 onion, chopped |
397 g (14oz) butternut squash, chopped |
1 salt |
1 black pepper |
Directions:
1. Cut the chicken into bite-sized pieces and place in a bowl. Sprinkle over the herbs and seasoning and toss well. 2. Lightly spray a griddle pan with fry light and heat. Sear the chicken for 1-2 minutes on each side till sealed then set aside. 3. Meanwhile, place the onion, squash and garlic in a large pan with the stock and passata and bring to the boil, add the chicken , cover and cook gently for about 30 mins stirring occasionally. 4. Add the beans to the pan stir well, cover and cook for 15-20 mins or until the chicken is cooked through and tender. Serve sprinkled with some fresh chopped parsley to taste. |
