Nice warming meal for those chilly nights or hungry bellys. Easy to make especially if using a slow cooker and if you batch cook is freezable in a rigid container. Thaw overnight in the refrigerator and reheat gently until piping hot. Ingredients:
2 onions, thinly sliced |
2 green peppers, deseeded and thinly sliced |
2 cloves garlic, crushed |
2 tbsp paprika |
381 g (1 1/2 lb) beef steak, sliced thinly |
397 g (14oz) chopped tomatoes |
113 ml (4fl oz) stock |
1 pinch salt |
1 pinch pepper |
Directions:
1. Place the onions, peppers, garlic and paprika in a microwabable dish, stir to mix evenly and cover with kitchen paper. Microwave on HIGH for 5-6 minuetes, stirring half way through the cooking time. 2. Stir in the steak strips and tomatoes along with the stock and stir well. Cover and cook on MEDIUM (50%) for 45-55 minuets until the meat is tender. Season to taste. 3. leave to stand for 5 minuets before serving with a selection of vegetables. 4. Alternativly put all ingredients into a slow cooker for about 4 hours. |
