Suzy's 3 Bean Chicken Chili |

This is actually a barbecue chicken chili. It's great comfort food! Ingredients:
2 lbs boneless chicken breasts, diced |
1 large onion, chopped |
2 medium green peppers, chopped |
16 ounces tomato sauce |
1 tablespoon vinegar |
1 1/4 ounces chili seasoning mix |
1 cup barbecue sauce, i use sweet baby ray's |
16 ounces pinto beans, drained |
16 ounces kidney beans, drained |
16 ounces black beans, drained |
1 teaspoon fresh garlic |
Directions:
1. Saute chicken in a large skillet with onion and green peppers. 2. Add 1/4 cup water and cook covered until vegetables are soft. 3. Do not drain. 4. Add all other ingredients, cover and simmer 20 minutes. 5. Serve with white rice. 6. Note: I usually end up adding a little more barbeque sauce here and there, and if you like it spicier, 1 tsp of crushed red pepper flakes usually does the trick. |
