Delicious, simple, and beautiful. Serving sushi salad on a bed of lettuce, garnished with slices of red and green bell peppers, makes this a work of art.
Ingredients:
3/4 cup flaked nori
1 teaspoon toasted sesame oil
8 cups cooked brown rice, cooled
1 teaspoon grated ginger root
3 tablespoons diced green onions
1 tablespoon honey
1 tablespoon rice wine vinegar
4 tablespoons low-sodium soy sauce
4 cloves garlic, crushed
8 leaves iceburg ettuce
1/2 each red and green bell pepper, diced
Directions:
1. Combine all the ingredients, except the lettuce and bell peppers, adding the roasted nori bits last.
2. Place a serving of salad on each lettuce leaf, garnish with diced pepper.
