High fiber whole wheat,banana,flax seed muffin. This is a recipe that I have worked on for some time and is still a work in progress. Ingredients:
2 large mashed bananas |
2 large eggs |
1/3 cup canola oil |
1 cup low-fat buttermilk |
1 teaspoon baking soda |
1/2 teaspoon kosher salt |
1 1/2 cups millers unprocessed natural bran |
1 1/2 cups organic whole wheat flour |
1 1/2 teaspoons cinnamon |
1 teaspoon ground cloves |
1 teaspoon vanilla |
3/4 cup raisins |
1/2 cup honey |
3 tablespoons whole flax seeds |
Directions:
1. Preheat oven 400 degrees. 2. Mash the bananas. 3. Add all the wet ingredients to the bananas and mix thoroughly. 4. Add the dry ingredients, except the raisins, to the wet ingredients and mix with electric mixer 2-3 minutes. 5. Add the raisins last and mix thoroughly. 6. Spray muffin tins with a grease release (Pam) and fill to the top of muffin tin. 7. Tap muffin tins on counter a couple of times to settle any bubbles in mixture. 8. Bake. Enjoy. |
