Surprisingly Delicious Brussel Sprouts |

No need to fear Brussels sprout any longer! This super simple recipe is a favorite in my house, and even my super picky mother-in-law loves them! Ingredients:
1 pound of brussels sprouts |
2 (or 3 or 4 or 5....) slices of thick bacon |
kosher salt and pepper to taste |
perhaps some olive oil, depending on how much your bacon puts out ;) |
Directions:
1. First, slice the Brussels sprouts in half. Slice them vertically down through the stems so the leaves will stay together. If they’re exceptionally large, quarter them. 2. Then chop up the bacon into pieces, like large bacon bits. In a skillet, cook the bacon over medium high heat. Once the bacon is done, take a slotted spoon and remove the bacon tid-bits, but leave the grease. 3. While still on med-high heat, add sprouts and toss to coat. Add a heavy pinch of kosher salt and pepper. You want to cook the sprouts until they are tender, but still have a little bit of a bite to them. During cooking, if you notice that the pan is getting too dry, splash a bit of olive oil in the pan to lube the sprouts back up. Add a lid (for if the oil is spitting at you, but it also helps it cook faster, keeping the heat in and kind of steaming the veggies as they brown). Cook for about 7 to 10 minutes until the leaves have turned soft on the outside but still hold their shape. Remove from heat, reintroduce the bacon, and serve! |
