My mom gave me a little recipe booklet that came with her NONE SUCH Mincemeat. This is one of the recipes that sounds good to me... Ingredients:
1 cup butter, softened or 1 cup margarine |
1/3 cup sugar |
2 teaspoons water |
2 teaspoons vanilla extract |
2 1/4 cups flour |
1 cup pecans, finely chopped |
1 1/3 cups mincemeat (one half of a 27 oz jar of none such ready-to-use mincemeat, regular or brandy & rum) |
1/2 cup confectioners' sugar |
Directions:
1. Preheat oven to 325 degrees F. 2. With mixer, beat butter and sugar until combined. Add water and vanilla and beat well. Stir in flour and pecans. 3. Shape dough into 2 1/2 inch circles, using about 1 tablespoon of dough for each. Top each with a slightly rounded teaspoon of mincemeat. Shape the dough around the mincemeat. 4. Place cookies, seam side down, onto ungreased baking sheets. Bake for 20 minutes or until bottoms are lightly browned. Cool on wire racks. 5. Place confectioners' sugar in plastic bag. Add cookies, a few at a time, and shake gently until coated. 6. Store leftovers covered in refrigerator. |
